This is why I love #sousvide. This is a bottom round roast, done at 127 degrees for 30 HOURS!!!!! Finished off with an herb-garlic crust under the broiler for 15 minutes. It has the texture of a perfect prime rib, but cost like $6 for the whole roast. #notafoodie
